One ripe passion fruit

50ml Rockfield Tropical Gin

25ml Passoa

25ml Prosecco

Method

Scoop seeds from one passion fruit into a cocktail shaker.
Add Rockfield Tropical Gin, Passoã, lime juice, sugar syrup, and a good handful of ice.
Shake vigorously (to create froth and chill well), then strain into 2 martini or coupe glasses.
Top each with a splash of prosecco.
Garnish with half a passion fruit (use the remaining one), floating on top.
